CRAZY IDEA for a Crispy Buffalo Chicken Sandwich - To be HONEST, I Didn't Think This Would Work...
I've had this idea for how to make a crispy buffalo chicken sandwich on the griddle for a while... and I had NO idea if it was actually going to work - but surprisingly it did, and this buffalo chicken sandwich with ground chicken turned out great!
We started by making a chicken patty using ground chicken, panko breadcrumbs, an egg, and a bit of shredded mozzarella. Then, after freezing the patties for about an hour so they didn't fall apart, we breaded and shallow fried them on the griddle. A quick buffalo sauce and mozzarella cheese concoction, and these ground chicken buffalo sandwiches were done!
Similar to the old school chicken patties that you got at the school cafeteria, but upgraded! Today was all about "playing with my food" and recipe testing a crazy idea, and it worked!

    So I dusted off + cleaned up my griddle and reseasoned it for the season. High heat and seasoned 8 times until it stopped smoking. Came back later to make smash burgers for the 1st time in 2024, they all stuck and were way overdone. I had such a hard time trying to flip the burgers, they were stuck to the griddle and by the time I did, they were pretty much crispy and wayyyy overdone lol Any clue to why you think that is? Maybe I should have cooked some bacon on there first before adding the burgers? I didnt think I'd have to add oil to the surface before cooking my burgers. I did not add any oil prior to cooking the burgers. Could that be it? Thanks Flat Top King!

    Outstanding recipe for the family members with Alpha Gal, like ours, and cannot eat meat or use products from live birth animals. Some cannot have cheeses either, its a bite. The topping takes it right over the top, neat idea and easy on the griddle.

    Have you tried to finish potatoes in margarine? Cook in a diner in Cape Cod gave me that tip. I use it whenever I want very crispy Hashbrowns. About to watch the video so I will find out.

    Something you're missing is the variety of potatoes. The variety makes a *huge* difference. Kennebec and Superior are excellent for being fried. You won't find these in the grocery store, you need to grow your own. It took me many attempts to learn how to make good hash browns but once I figured it out, I can do it everytime.

    We actually use ground chicken quite a bit around our house. One of our favorite ways to cook with it is to make "burger" patties as you have done here, but incorporate the ingredients that you'd use to make crab cakes (including the crab in the mixture), dredge in corn meal or panko and shallow fry them. Stand alone or on a sammy with tarter or mayo etc, tomato, lettuce, and a few pickles and your in the game! So good!

    Another addition to bring it to the next level I just thought of: cheese stuffed ground chicken burgers. Just fill the mold 1/3 the way, add cheese, fill the rest of the mold and then press to desired diameter. Tell me what you think as I want to try that soon.

    Did something similar, but went Parmesan route. Dropped some parm cheese on griddle and make cheese crisps. Used ground chicken and made chicken smash patties. Made marinara sauce. Toasted buns. Bottom bun got marinara, fresh mozzarella, chicken patty, cheese crisp, another chicken patty, another cheese crisp. Topped with a touch more marinara and top bun. Turned out very good. Tasted a lot like chicken parm sandwich, but a touch more healthy.

    I would have never thought to shallow fry them. A few of my friends don’t eat beef so when they are over and we do burgers or steak I have always ground up chicken breasts to make chicken burgers and they turn out amazing with some shake that and pineapple sriracha seasoning. Might have to try frying them next time.

    Since you invited it (LOL!) hate on you item-1. If you are using the Frank's "Wing" sauce, it's already thinned with the fat/faux butter. So I would go with original before thinning with butter. And that wraps up the hating segment :) Neal, those chicken patties look AMAZING! I fresh grind my own chicken with good ol' Costco boneless, skinless chicken thighs so I think the higher thigh fat content would work really well here. I'm at the 70 pct. mark on the video, reviewing as I watch and wow you are truly a mad scientist! I'm a fan of method 2. Let's see what you think in the moment of truth .... Actually, I'm not surprised. After the 3rd flip where the chicken patties started to lose their flop, I knew you had a winner.     That looks really good. I have a version of a chick-fil-a chicken patty that I do. I marinate the chicken in pickle juice for a few hours before seasoning and dredging. It gives it a little kick like no other chicken sandwich does. GBO

    I like the vid. More economical to buy a whole breast and put it in a food processor than buy ground chicken.

    Thank you for the effort on this. But a hard pass for me on ground chicken. It's almost as bad as ground turkey.
